A classic French marshmallow uses whipped egg whites to add fluffiness. We combine this texture with the classic flavour of Turkish Delight.

Recipe

1Molten Sugar
  • 210 ggranulated sugar
  • 70 gcorn syrup
  • 50 gwater
  • 2.0 gcream of tartar
  1. mix ingredients
  2. heat at 116 ºC
2Hydrated Gelatin
  • 60 gwater
  • 14 ggelatin
  1. mix ingredientsMix these in the bowl of a stand mixer.
  2. sit for 15 min
3Marshmallow Fluff
    Using 12
  • 9.9 mLrose water
  • 4.9 mLorange essence
  • 1.2 mLmagenta food coloring gel
  1. mix ingredientspour the liquid sugar mixture into the hydrated gelatin, mixing continuously on high until the mixture triples in size.
  2. mix ingredientsmix until uniformly incorporated
  3. pipetransfer to molds that have been oiled and coated in a layer of icing sugar
  4. covercover with saran wrap
  5. refrigerateuntil cool
