Turkish Delight Guimauve
A classic French marshmallow uses whipped egg whites to add fluffiness. We combine this texture with the classic flavour of Turkish Delight.

1Molten Sugar
- 210 ggranulated sugar
- 70 gcorn syrup
- 50 gwater
- 2.0 gcream of tartar
- mix ingredients
- heat at 116 ºC
2Hydrated Gelatin
- 60 gwater
- 14 ggelatin
- mix ingredientsMix these in the bowl of a stand mixer.
- sit for 15 min
3Marshmallow Fluff
- Using 12
- 9.9 mLrose water
- 4.9 mLorange essence
- 1.2 mLmagenta food coloring gel
- mix ingredientspour the liquid sugar mixture into the hydrated gelatin, mixing continuously on high until the mixture triples in size.
- mix ingredientsmix until uniformly incorporated
- pipetransfer to molds that have been oiled and coated in a layer of icing sugar
- covercover with saran wrap
- refrigerateuntil cool
